Ask anyone in Morocco to name a great honey and the answer will almost always be the same: zaâtar. Wild thyme grows in fragrant carpets across the country’s high, sun-drenched scrubland, and the honey the bees draw from it is considered the benchmark of Moroccan beekeeping — intensely aromatic, warmly herbaceous, with a long, elegant finish that stays with you.
A tradition of well-being
Thyme honey occupies a special place in Moroccan homes. It is the jar that comes out when winter settles in: stirred into hot drinks, taken by the spoonful in the morning, offered to guests alongside mint tea. Generations have cherished it as a comforting, fortifying part of the daily routine — a tradition of warmth and hospitality passed from kitchen to kitchen.
Origin and terroir
Our Zaâtar honey is harvested from wild thyme fields in Morocco’s mountainous interior, where the plant grows untamed at altitude, far from crops and treatments. The dry air, intense sunlight and aromatic soil concentrate the thyme’s essential character into the nectar. The result is a honey with a deep golden-amber colour, a robust herbal nose, and a flavour that is unmistakably, proudly Moroccan. It is raw and pure: gently filtered, never heated, nothing added.
How to enjoy it
- A morning spoonful, on its own or on warm bread with olive oil.
- Stirred into herbal infusions, verbena or ginger tea — add it off the heat to preserve its aroma.
- Paired with goat cheese, walnuts or roasted vegetables for a savoury twist.
Raw thyme honey may slowly crystallise — a natural sign of authenticity. A gentle warm-water bath brings back its silky texture.
