Spring in Morocco’s citrus orchards
For a few weeks each spring, the citrus orchards of Morocco are covered in white blossom, and their perfume carries for miles. Our lemon blossom honey is harvested at exactly this moment, when the bees work the flowering lemon trees from morning to dusk. The result is a light, clear honey — pale gold in colour — with a delicate fruity flavour and a fresh, gently floral finish.
An everyday pleasure
Where some Moroccan honeys are bold and intense, lemon blossom honey charms with finesse. Its soft sweetness and bright aroma have made it a traditional favourite for moments of calm: a spoonful in the evening, a touch of gentle sweetness in a bedtime infusion, a refined treat for guests. It is often the honey that wins over people who think they do not like honey.
Origin and terroir
Our jars come from citrus-growing regions such as the Souss valley, where lemon and orange groves stretch between the mountains and the sea. Hives are placed in the orchards only for the blossom season, giving a honey of remarkable purity and character. It is raw and unheated, simply filtered, so the fragile citrus aromas arrive in your kitchen just as they left the orchard.
How to enjoy it
- Drizzled over yogurt, fresh fruit, pancakes or crêpes.
- As a refined sweetener for green tea, verbena or chamomile — add off the heat.
- In dressings and marinades, where its citrus note lifts the whole dish.
Being raw, it may crystallise softly over time into a fine, creamy texture — completely natural. A brief warm-water bath restores its clarity.
